We were once asked to recommend a tea by a customer - something fragrant and refreshing, but not fruity and floral. And the Taiwanese high mountain oolongs 高山茶 (Gao Shan Cha) was the one that fit in most. That was exactly what the customer wanted!
Taiwanese Gao Shan Cha are a group of lightly oxidised and rolled oolongs that are grown at an altitude of 1000m or more above sea level, with delicate fragrance and sweetness. This micro lot is grown on one of the highest of Taiwan’s tea growing mountains at approximately 2300m, made from Qing Xin 青心 cultivar. The high growing altitude and delicate character of the cultivar produces a tea with a finer texture, smoother mouthfeel, and surprisingly fragrant nose. Brews a clean cup with spinach and sweet corn sweetness, with a buttery floral fragrance!
