We were once asked to recommend a tea by a customer - something fragrant and refreshing, but not fruity and floral. And the Taiwanese high mountain oolongs 高山茶 (Gao Shan Cha) was the one that fit in most. That was exactly what the customer wanted!
Taiwanese Gao Shan Cha are a group of lightly oxidised and rolled oolongs that are grown at an altitude of 1000m or more above sea level, with delicate fragrance and sweetness. This micro lot has smooth calming flavours naturally gifted by the high altitude of Li Shan at approximately 1300masl. Coupled with the gentle character of Qing Xin 青心 cultivar, the resultant brew is light and clean with sweet notes of watercress and rice, with a texture of clarified milk and a cooling aftertaste. A gentle tea best appreciated with careful brewing, for the discerning tea drinker.
