We remember vividly our first encounter with Zhang Ping Shui Xian! We were intrigued by this pretty little biscuit of a compressed tea with green and brown leaves, and tasted like the light Taiwanese Oolongs, but more floral in a flamboyant Chinese tea way! So we learnt that this tea created in 1914 and has since been made in Zhang Ping County in Fujian in the same way as it was created. This tea is made from leaves harvested once a year from wild grown tea trees from Shuang Yang Village, which usually is preferred to teas from trees harvested multiple times a year as the trees have time to recover and accumulate nutrients before its harvested again. We love its refreshing creamy floral sweetness that lasts many steeps, and the wild grown nature of the tea produces a richer, more complex brew!
