Because we love light delicate teas to savour the more textured flavours, therefore we have a soft spot for white teas. This particular white tea of a 'Shou Mei' grade may not be as treasured as the 'Silver Needles' and 'White Peony' make of white teas, but Shou Mei type white teas are loved for its more intense and smooth flavours. This batch, made by the Granny of an acquaintance, has notes of pears and sweet rice. The leaves aren't that pretty, but its the flavours that matter. And we have been told not to remove the stems when brewing - the stems add a different layer of sweetness!
