We love a good tea story. The Kama-iri-cha is a old-school Japanese green tea made by the 'wok-fried' method, which is still a common method of green tea making in China and Taiwan. This method of making green tea was 'the way' of making green teas in China during the Ming Dynasty, and introduced to Japan then. In the 1700s, the steaming method of producing Japanese green tea became the new way, and that has been the mainstay of green tea production till now.
The first impression we had of drinking this tea was that the fragrance reminded us of the Genmaicha - except there was no added rice! The toasty fragrance of rice crackers then leads to the sweet vegetal flavours that are more commonly associated with senchas. Brew it light to enjoy the rice cracker fragrance, and strong to appreciate the sweet vegetable floral-umami of a good sencha!
