If High Mountain Tea or 高山茶 is the representative tea of Taiwan, then Fu Shou Shan, together with Da Yu Ling and Li Shan are definitely the most prized of the lot. High Mountain Tea necessarily refers to tea that are grown on altitudes of more than 1000m, and Fu Shou Shan's teas are grown at about 2000-2500 m. A relatively smaller garden compared to the other two esteemed areas, this tea has a finer, smoother texture and a gentle milky fragrance. This beautifully processed tea is definitely one that needs time to brew and savour, especially since such teas are delicate and rarer. A tea thats recommended for the connoisseur tea drinker.
