Huoshan Huang Ya 霍山黄牙 is a more known ‘member’ among the obsure yellow teas group. They necessarily undergo the defining process of 闷黄, a method of steaming the leaves covered in wet cloth, which reduces the grassiness and brings out a mellow bean-like flavour! This batch is grown at about 800masl at Huoshan 霍山 in Liu An district of Anhui. The cultivar 金鸡种 (translates to Golden Chicken) is native to Huoshan region. Brews a smooth, medium bodied texture with first notes of melon seeds, then long lasting monk beans,and base note of watercress.
