Yellow teas are the most obscure of the tea categories, and only traditionally produced in China. PYHT平阳黄汤 dates back to Qing Dynasty, but its production was lost after the liberation of China, and was only successful reproduced in 2003. The characteristic yellow tea processing stage of 闷黄 (covered, simmered, browning) produces tea that brews notes of roasted rice, melon seeds and sweet corn, embedded in a rounded texture!
