The 36 peaks of 武夷山 Wuyi Mountain are famous for their darkly roasted oolongs called 岩茶 yancha (cliff teas). This batch is made from 肉桂 Rougui (aka Cassia) cultivar and harvested in late spring from 燕子窠 Yan Zi Ke at about 700masl, the leaves requires multiple roasting with controlled temperature of between 90-130OC, depending on the stage of processing. Processing only completes in summer! Brews a roasty drink with floral and ripe plum highlights on a base of caramel and mineral notes.
