Don't be deceived by the name An Ji Bai Cha 安吉白茶! Despite the 'baicha' aka 'white tea' in its name, this tea is a through-and -through green tea! It was innocently named so by the locals historically because the area traditionally grows green tea, and this tea appears whiter in comparison. Though rumoured to be around since the reign of Huizong Emperor of Song Dynasty due to a potentially disputable reference in the emperor's book 'Treatise on Tea', the current Anji Baicha likely dates back to 1930s when wild tea plants with whiter leaves were found in Anji District in Zhejiang! This batch of tea is made from the cultivar Bai Ye No. 1 白叶一号, which translates to 'white leaf no. 1'. These leaves contain lower amounts of chlorophyll, and the biochemical pathways eventually produces a tea with comparatively higher content of theanine! Theanine is the famed component of green tea that brings about the calming and invigorating effects associated with increased concentration. For us, we are more concerned about flavours! This one is delicate, with a vegetal sweetness reminiscence of sweet watercress and baked melon seeds, embedded in a medium body with a smooth aftertaste! We like it brewed at a lower temperature of 80 degrees celcius with mineral water!
