White teas are NOT traditionally grown in Taiwan. But in the recent years, there are more and more Taiwanese farmers making white teas. We at Pekoe and Imp are fans of white tea and have been actively sourcing for white teas. White teas are (preferably) sundried and are the least processed of teas. However, to make traditional white teas like those in Fujian, leaves need to be dried within a fixed time frame. Taiwan's climate is more humid and thus to achieve the 'traditional standards', the condition must be very right! This is batch of white tea is the closest to that 'Fujian' standard among many of the Taiwanese white tea we have tried! A beautiful cup with floral sweetness and a light nutty note similar to almonds, this tea is still pretty delicate in flavour due to its age. But white teas are known to age well and the flavours from this white tea will continue to deepen over time.
